T'is the season to be poetic, sing your carols
ring

lips raised to the heavens, singing praises to the
season!
COFFEE STORAGE: Storing your coffee in non-porous (glass or metal) airtight container in a cool, dark place protected form sharp swings in humidity and temperature is the recommended storage method. Canning jars or metal or glass containers with a gasket and clip lock work well. Don't overfill, and keep the gaskets clean for a good seal. Bear in mind that coffee beans release CO2 and an aromatic whoosh may be produce when the container is opened.
Storage in the refrigerator or freezer is not recommended! Freezing gives one the satisfaction of having done something decisive, at the coffee's expense. For coffee, the temperature swings attract condensation, and destroy the delicate balance of the oils. Also, the beans absorb food smells like they were first cousins to baking soda.
